I like super quick and easy dinners that don't take twenty ingredients. Below are some of our household favorites plus additional tips that I use. Easy Chicken Pot Pie

Directions

1. Preheat oven to 350℉

2. You can skip this step if you have precooked chicken. Cook your chicken breast on a skillet and season to taste with salt and pepper (I also use seasoning salt or chopped onion to mix it up at times)

3. Chop chicken breast once it is fully cooked or take about 2 cups of chicken pieces from the rotisserie if have full chicken that is not pre-shredded.  

4. Begin to make gravy mix (follow the directions given on the packet)

5. Whisk gravy until thickened 

6. Stir together mixed vegetables, chicken, and gravy in a medium bowl. Set aside.

7. Unwrap the pie crust and place the first crust in the pie dish. Pour and spread out the chicken vegetable mixture onto the crust. Place the second pie crust over and pinch the ends to attach it to the first pie crust and enclose the filling. 

8. Poke a few small holes with a fork in the center of the pie and place in the oven for 25-30 minutes or until golden brown. Once your pie is done allow it to cool for 10 minutes and enjoy! 😍

Recipe

1 box of refrigerated pie crust (2-crust)
1 package of chicken gravy mix pack ( I like to add two packages of gravy since it is my favorite partπŸ˜„)
12 oz of frozen mixed vegetables 
2-3 pieces of boneless chicken or 2 cups of precooked rotisserie chicken 
salt and pepper to taste

Delicious Taco Ring

Directions

1. Heat oven to 350℉

2. Cook beef until brown on a skillet. Add taco seasoning and 1/2 cup of water. Allow it to simmer for 3-4 minutes to thicken. In a medium bowl, mix beef and shredded cheese

3. Spray a cookie baking sheet with nonstick cooking spray. ( I like to use aluminum foil on baking sheets for an easy clean up too) Unroll both cans of crescent dough. Arrange the triangles onto a cookie baking sheet in a circle. The dough will overlap. You will have about 9- 12 rolled-out crescent rolls in a circle. It should look like a sun. (As shown in the video)

4. Spoon the beef mixture onto the dough. 

5. Grab the top part of the dough and cover the mixture. Tuck the top part of the triangle onto the bottom part. Repeat steps 4 and 5 until the beef is completely covering the circle.  

6. If you have leftover dough use it to cover up spots beef mixture is exposed. (Some filling may show)

7. Bake for about 20 minutes or until golden brown. Cool for 5-10 minutes and serve in slices with your favorite toppings. Enjoy! πŸ˜‹

Recipe

1 Ib ground beef
1 package of taco seasoning
½ cup water
1 cup shredded cheese- My favorite is the Mexican-style shredded cheese
2 cans of refrigerated crescent dinner rolls
Topping additions as desired- Shredded lettuce, sour cream, diced tomatoes, olives, salsa, guacamole.

Impress the INLAWSagna

Depending on how you want it, you can make it vegetarian or not. (More information below) I believe it is truly worth the time to make a well-seasoned lasagna. I promise it will be the most flavorful lasagna you'll ever have.

Directions

1. Preheat oven to 350

2. Bring a large pot of salted water to a boil. Add lasagna noodles and cook according to package directions. Drain pasta.

3. (If you do not want to add beef you may skip this step and move on to step 4.) Add beef and Italian sausage into a skillet and cook until brown. Remove grease. πŸ’«Additional tip- If you add beef and sausage do not use spinach. It may be overwhelming.

4. Heat olive oil in a separate large skillet from beef over medium-low heat. When simmers add onions, garlic, and oregano.  

5. Cook for about 3 minutes. Reduce heat to low and add tomato paste and red pepper flakes. Stir until the paste is dark red. Optional- stir in vodka. 

6. Stir in heavy cream (you can also use coconut milk) and pesto. Season with salt and pepper. Add butter and stir until melted. 

7. Simmer for about 5 minutes for flavors to meld. Add parmesan and basil. Remove from heat. 

8. Spread a quarter of the sauce on the bottom of the baking dish (9 by 13in). 

9. Top with lasagna noodles. It is fine if they overlap to create an even layer. 

10. Spread half of the ricotta and spinach. Add another quarter of the sauce. 

11. Repeat 9. and 10. 

12. Top with more lasagna noodles to cover and finish with the rest of the sauce. Sprinkle provolone and mozzarella over the top.

13. Cover with foil and bake for 20 minutes. Remove foil and bake until the cheese is bubbling about 15 minutes. Allow it to stand for 10 minutes Top with parmesan and basil. Enjoy! πŸ’š

Recipe

12 oz lasagna noodles
¼ cup olive oil
1 diced onion (small)
8 garlic cloves
2 teaspoons of dried oregano
1 cup of tomato paste
1-2 teaspoons of crushed red pepper (Depends on spice tolerance)
¼-½ cup of vodka
1 cup of heavy cream 
¾ cup pesto
Salt and pepper
2 tablespoons of salted butter
⅓ cup grated parmesan cheese
2 cups ricotta cheese
1 (10 oz packages) of frozen spinach
1 cup of shredded provolone mozzarella cheese mix
Fresh basil- optional or if you have ground basil you can put about a tablespoon in the sauce

If you want meat in lasagna add:
1 pound of beef (optional)
1 16 oz package of Italian sausage (optional)

White Queso Mama Chicken Enchiladas

Directions

Preparation of the chicken is needed so plan ahead of dinner time. πŸ˜‹ Frying your tortillas helps your enchildas to not come out the oven soggy. It is the secret to the best enchildas and makes a world of a difference.
  1. Put boneless chicken, chicken broth, and seasonings into a crockpot on low
  2. Set timer for 4 hours 
  3. Preheat oven to 350
  4. Shred chicken into a bowl once it is done
  5. Put oil into a pan on low
  6. Fry tortillas for about 30 seconds on each side
  7. Put salsa verde and sour cream into a separate bowl and mix together
  8. In a 13x9 dish put ½ of the mix on the bottom
  9. Put shredded chicken and half of the shredded cheese into a tortilla and roll it tight
  10. Place into a dish and repeat until pan is filled
  11. Pour a ½ container of white queso, the last half of the sour cream mixture, and put the other half of the shredded cheese on top
  12. Place in oven for 20-25 minutes
  13. Allow it to cool for 10 minutes and Enjoy!

Recipe

Crockpot enchilada chicken

1.5- 2 pounds of boneless chicken
2-3 cups of chicken broth
1 small onion
1 ½ tablespoon chili powder
1 ½ tablespoon paprika
1 ½ tablespoons minced onion
2 ¼ teaspoon cumin
1 ½ teaspoon garlic powder
1 ½ brown sugar
¼ teaspoon salt

Enchiladas

3 tablespoons of oil
12 oz shredded Mexican cheese
7 fajita-size flour tortillas (8 in)
12 oz. mild salsa verde
½ cup of sour cream
½ of Mama Queso- white queso

You can simplify this recipe by skipping the sour cream and salsa mixture too!
